“Small batch” is one of those phrases you see everywhere in the food world, especially when it comes to hot sauces, craft products, and seasonings. The problem is that the term gets used so often that it can start to lose meaning.
So what does small batch actually mean?
At Cleared Hot, small batch is not a marketing gimmick or a fancy label designed to make products sound more premium. It is quite literally how we make our sauces and seasonings, with every batch produced by hand in relatively small quantities to maintain quality, consistency, and flavour.
Depending on the sauce and the time of year, we usually produce somewhere between 25 and 100 bottles at a time. That may sound small compared to large commercial food manufacturers producing thousands of bottles per hour, but that is exactly the point.
Small Batch Means Hands-On Production
Every Cleared Hot sauce is made entirely by hand.
From peeling fruit and vegetables to weighing ingredients, cooking sauces, bottling, labelling, and packing orders, every stage of the process is done personally rather than being automated by large-scale machinery.
That level of involvement takes far more time, but it also means every batch receives proper attention rather than being rushed through a production line.
In many ways, small batch production is about staying close to the product. You notice the little things. You can adjust where needed, maintain consistency, and focus on flavour instead of simply focusing on output.
Quality Over Quantity
One of the biggest advantages of being a small-batch producer is control.
Large commercial manufacturers often need products to be produced as quickly and cheaply as possible, which can sometimes mean compromising on ingredient quality, preparation methods, or flavour complexity.
For us, the priority has always been quality first.
By keeping production smaller, we can spend more time preparing ingredients properly, balancing flavours, and making sure every sauce tastes exactly the way it should. Sometimes that means spending hours peeling fruit and vegetables or carefully weighing every ingredient by hand, but those small details genuinely make a difference to the finished product.
Small batch allows us to add the extra touches that are difficult to maintain at mass-production scale.
Locally Sourced Ingredients Matter
Whenever possible, we source ingredients locally because freshness matters enormously when making flavour-driven sauces and seasonings.
Fresh chillies, fruit, garlic, onions, and spices all behave differently depending on quality and freshness, and using good ingredients from the start gives you a far better final product.
You cannot hide poor ingredients in a sauce, no matter how much heat you add.
Recipe Development Takes Time
One thing many people do not realise is just how much testing goes into creating a new sauce before it ever reaches customers.
Some recipes take months of experimenting before they are finally right.
Changing one ingredient, altering acidity levels slightly, adjusting sweetness, or balancing heat differently can completely transform a sauce. It is a constant process of trial and error until everything works together properly.
That is one of the reasons small batch production is so important to us. It gives us the flexibility to experiment, refine recipes, and focus on flavour rather than simply chasing volume.
Small Batch Does Not Mean Small Standards
There is sometimes a misconception that small-batch food producers are less professional than larger manufacturers.
In reality, the standards still have to be extremely high.
Every sauce still requires proper food safety procedures, pH testing, documentation, shelf-life controls, ingredient traceability, and Environmental Health compliance. The difference is that instead of huge automated systems, much of that responsibility falls directly on the producer.
When you run a small-batch business, you are not just making sauce. You are managing every part of the process yourself.
The Biggest Challenge? Time
The biggest challenge with small-batch production is simple: it takes time.
Everything takes longer when products are made properly by hand, especially when you are personally preparing ingredients, cooking, bottling, labelling, packing orders, and handling the business side at the same time.
There are definitely easier ways to make hot sauce.
But easier is not always better.

It is about having the time to focus on the details that matter instead of pushing out huge quantities as quickly as possible. It is about creating products we are genuinely proud of and making sauces that people actually remember after trying them.
