Serves: 2–3
Prep: 5 minutes
Cook: 25–30 minutes
Difficulty: Easy
INGREDIENTS
- 750g frozen chips
- 1–2 tbsp vegetable oil
- 2–3 tsp Cleared Hot Chinese Salt & Pepper Seasoning
- 2 spring onions, finely sliced
- 1 red chilli, finely sliced
- 1 small garlic clove, finely chopped
- Small handful of fresh coriander, chopped
Optional
- ½ small red onion, finely sliced
- ½ red pepper, finely sliced
- 1 tsp sesame seeds
- Cleared Hot hot sauce for an extra kick
STEP 1 — GET THE CHIPS CRISPY
Preheat your air fryer to 200°C.
Add the frozen chips and cook according to the packet instructions, usually around 20–25 minutes.
Shake the basket several times during cooking.
No air fryer?
Cook the chips in the oven at 220°C / 200°C fan / Gas Mark 7 until golden and crispy.
STEP 2 — PREPARE THE FLAVOUR
While the chips are cooking, heat a large frying pan or wok over medium-high heat.
Add a small splash of vegetable oil.
Add the chopped garlic, red chilli, spring onions and optional red onion and pepper.
Stir-fry for 1–2 minutes.
You want everything softened slightly but still full of colour and crunch.
STEP 3 — DEPLOY THE SEASONING
Once the chips are golden and seriously crispy, transfer them straight into the hot pan.
Add:
2–3 tsp Cleared Hot Chinese Salt & Pepper Seasoning
Toss everything together over a high heat for around 30–60 seconds.
The seasoning will cling to the hot chips and coat them in that unmistakable Chinese takeaway-style flavour.
STEP 4 — FINISH
Take the pan off the heat.
Add the fresh coriander and another light sprinkle of Cleared Hot Chinese Salt & Pepper Seasoning.
Give everything one final toss.
Then get them onto a plate immediately.
SERVE
Pile those crispy, seasoned chips high.
Finish with:
- Fresh chilli
- Spring onion
- Fresh coriander
- Sesame seeds
And, if you’re feeling brave, a drizzle of your favourite Cleared Hot hot sauce.
Then dig in.
